    How often do you roast?

    I don't mean a full Sunday lunch style... I mean a roasting tray with stuff in it? Not a whole chicken..... I mean... stuff.

    I've currently got par boiled (skin on) spuds in some olive oil and salt/pepper and 4 peeled whole onions in a roasting tray...... and soon a few sausages will join them.. then some sliced green and red peppers will join the throng for the last 15... and it'll all be in one oven tray.

    Do you lot do this regularly too?

    I mean.... maybe not sausages... maybe no meat at all... but roast things... adding as you go... and serve in their own juices?

    Im always doing roasties, whether it be just spuds, or other root veg (sweet potatoes, parsnips, carrots, whole bulbs of garlic), or lighter stuff like peppers, leeks, mushrooms etc. We do love a roast dinner, it's better than a fry up anyway

    I tend to parboil the veg, then drain em and let em go cold, before pan frying them in the best fat I have, whether that be really nice olive oil, or better still goose or duck fat. After they are browned I stick em in the oven on a medium heat till they are nicely golden all over. This way, they *always* turn out really crispy and crunchy (esp the parsnips and spuds).

    I always have meat joints in the freezer, mini beef roasting joints, just a few quid each and enough for one greedy or two not so greedy, and my possibly all time favourite - belly pork !

    No meat as I'm Veggie, but I do roast vegetables every now and again. Potatoes, different peppers, courgettes, whatever else is seasonal, quartered onions, whole garlic cloves in skins, tomatoes, oodles of rosemary, olive oil.

    I never use olive oil for pan frying (it starts breaking down at quite low temps - groundnut or sunflower oil is better). I do roast veg, things like stuffed peppers, (baked rather than roasted as there is no fat added) or potatoes and parsnips - preferably in goose fat!

    My doggie does not eat 'dog food' so I I'm always roasting either meat or chicken for it. Once cooked I slice it , bag it and freeze it.

    now you're talking Kal... the meat is kinda secondary.

    If I do one big tray of veg roasted like you describe, 5 minutes from the end a large handful of sunflower seeds goes in and if I've got them, sesame seeds.

    I love roasted seeds.. they are heaven. But only for a short time.

    As I missed this first time around, yes, I roast. Joints occasionally (beef or chicken usually), certainly sausage toad from time to time, but mostly, either potatoes with various blends of spices (and oil), or roast veg's. Roast veg's ..... yummmmmmm.
