No I haven't but cooking it in apple cider is superb done that myself and saw nigel Slater do it in his show a few days ago.
it works well - addition of JD helps too !
no way i'm putting my JD single barrel in a bleeding ham :)
go buy some "cooking JD" then :P
I've picked up a bottle of the JD Tennessee Honey, and I imagine that'd go VERY nicely on stuff to be cooked. :)
hams boiling in cola for the next couple of hours :)
you did use full fat coke right?
Phosphoric acid treated ham.
You should only par boil a ham these days, as the salt levels are now much lower than they used to be and it therefore doesn't *need* as much time boiling.
Give it half of it's advised cooking time on the hob in plenty of water with a couple of bay leaves, loads of black peppercorns, couple of leaves of sage and thyme (NO salt !), then drain it, glaze it and roast for the rest of the time.
My glaze is half honey half muscavado sugar plus cinnamon and black pepper.
Had ours for dinner this evening. Without the Coke.
I also reduced the liquid off the boiling, added a couple of Knorr Ham cubes and a glass of white wine, reduced it all the way down, then a tad thickening with butter and there's yer sauce.
wasn't asking for other recipes though ? :p
also there was no advertised cooking time as it is from my local farm ;)
i shoved my cooking thermometer in the middle and stopped boiling when it was ready.
unreal result, tender, tasty, will deffo do it again!
a litre of the juice is going in the turkey pan for tomorrow as Nigella said not to throw it away!
Aye I know, but I cant help sharing good food stuff.
I had 5 litres of liquid in the pan, after reducing it I have just under one pint.
