Apple Enchilada Dessert , Apples rolled in flour tortillas. VERY delicious, easy and fast to make. Substitute apples with peaches or cherries if desired.
INGREDIENTS:
* 1 (21 ounce) can apple pie filling
* 6 (8 inch) flour tortillas
* 1 teaspoon ground cinnamon
* 1/3 cup margarine
* 1/2 cup white sugar
* 1/2 cup packed brown sugar
* 1/2 cup water
DIRECTIONS:
1. Preheat oven to 350 degrees F (175 degrees C).
2. Spoon fruit evenly onto all tortillas, sprinkle with cinnamon. Roll up tortillas and place seam side down on lightly greased 8x8 baking pan.
3. Bring margarine, sugars and water to a boil in a medium sauce pan. Reduce heat and simmer, stirring constantly for 3 minutes.
4. Pour sauce evenly over tortillas; sprinkle with extra cinnamon on top if desired. Bake in preheated oven for 20 minutes
Apple enchilada's sound fantastic....but was planning to have chicken enchilada's as main course!!!

Sorry to bring up an old thread, but this is awesome, i changed the recipe a little to go with my mental attitude towards food and came up with the same thing but using part stewed apples, Raisins and plums with a little chilli and served them with a Sour Cream and brown sugar dip and they wre completely awesome!!
I just dumped the apples, plums and raisins in a pan with a tiny little bit of water and added one chilli sliced finely with all the pith and seeds removed and cooked it slowly for about 15 mins, then made the enchiladas and baked them off in the oven for about 10 mins til the outside just touched brown and served them with the dips..... they went down a treat, and i got treat afterwards if y'all know what i'm saying *sly grin*
Anyways, top tip guys, nice basis for come creative recipes if yer willinto try em out...
