    Next Day Wine

    Birthday couple of days ago. Got a nice Chilean Erazzuriz(sp?) 2000 Syrah Max Reserva. Must be a £8 bottle of wine I guess and impatient as ever I open and poor a glass. Quite nice, but no orgasm! Suble fruits but still the heavy tanins.

    Next day, I poor another glass and what a change . It was nectar, clear cherry and blackberry fruit flavours, softer tanins, gorgeous complicated nose and almost metallic colour. It's no wonder some top wine tasters poor their wine into a jug ready for drinking the following day.

    Yeah but that would mean you'd have to open it and not drink it Clingy, how likelys that in all honesty eh?

    I'm not 100% convinced about the breathing thing - thought if where you store your red's is a little cool then bringing it up to room temprature seems to have a better effect.

    Decanting a wine allows it to oxidise slightly which can take the edge of some wines , but I'm told it should only need 30 mins or so.

    Any more and you'd run the risk of over oxidising it and getting it over acidic

    I'm with Clingy on this.

    Its not just breathing...the thing needs to be left for ages in some cases.

    Clingy. Your taste buds have not decieved you. Ironically White's are often better too. The thing is, and its the weird bit, you can re cork them and they still improve.

    Thoughts for you: Most wine bottlers use an inert gas in the top of the bottle to pro long shelf life. It literally dissolves in the wine. It takes a LONG time to go away.

    To breathe a wine is not just enough. I can prove that by glugging a bottle from 3 feet in the air into a measuring jug and then back into the bottle. It still aint right. Its better, but not perfect. But open one the day before, leave and then drink and you can tell straight away.

    The danger is that some wines dont like it, so its more by luck that judgement.

    Now Deckard has recently done good work on Vino. He did a proper wine course and I had the priviledge of stealing the entire course note book from him.

    and the result of this has been some simply superb wines that I would never have opened. And the pinnacle so far has been a Corbiere that I would never have paid the extra £1 over the normal for. I did this time.

    Life is better

    Cheap red tends to be best if left for a day. Mid price white such as Australian Chardonnay tends to be much better the day after. Open, drink a glass, leave for an hour, re cork, back in fridge... enjoy tomorrow.

    And the BEST example of a drink that improves by MILES like this, but left for longer.

    VERMOUTH.....red or white. Go to Sainsbury's or Tesco, or Safeway, buy a bottle of each at the "own brand" cheap end of the shelf. Ignore Martini.......£2.77 for a bottle kinda stuff.

    Get home, unscrew, pour one large one for you and your other half, then lid on, into the drinks cabinet and leave for 3 to 4 months...longer if possible. The white darkens with time, the red become more dark-fruity (run out of words on that one) and suddenly your cheapo bottle is flavour of the month.

    Aye, that is a BIG issue m8. You know me too well.

    And, whilst on this topic, a most uncharacteristic action on my part. I actually laid some bottles of wine down. It seems like years ago but it is only 8 months now and worse still it needs 5 years at least. Wine that Gluck says is a 17 out of 20 now and will be 20 out of 20 in 5 to 10 years time.

    It's a New Zealand or Aussy Riesling in a screw cap bottle.

    As to the breathing, dear Mr Gluck recons some wines can be left for 3 days or more. I have always known (from my taste view) that wine improves overnight but the difference in this one was marked! Perhaps its the Shiraz/Syrah grape that benefits most.

    So Zak, what whites do you find improve best? Sauv Blanc?

    Chablis.....dunno why but the M&S Chablis is superb day after. Tastes somehow greener.

    A tip for box red wines (if you ever drink them that is)......

    Generally box reds are so-so at best. They're OK for dishing out at parties but not really for enjoying. You can really improve their drinking qualities in many cases by letting a bit of air into the bag well before drinking them. To do this you need to pour a large glass out of the box then turn the box on its back, with the spout in the air and then open the spout again. This will let in one glassful of air. Leave for 24 hours and the wine may be significantly better. Of course it then won't keep as long, but how long is 3 litres of wine going to last anyway?
