    Serious Minestrone

    this is a no messing, man of a soup...ready?
    Its not hard..its easy as you would believe. Doesn't matter if you cant cut vegetables up finely....irrelevant

    One large onion.....diced. (cheap)
    2 or 3 carrots....diced (and/or a parsnip if you prefer..guess what....diced..and its cheap)
    Stick or 2 of celery...diced (optional and cheap)
    Cabbage....cut into rough strips (cheap)
    2 pints boiling water (yup...NO STOCK CUBES) (very cheap)
    1 or 2 courgettes...wait for it....yup..diced (cheap)
    2 or 3 spuds......hold it......diced (cheap)
    1 tin of chopped tomatoes. (cheap)
    a handful of spaghetti (that rea cheap stuff is fine)


    Heat oil in big pan...enough oil to fry onions.Dont care what oil...little as possible though. Fry em gently until soft. Add carrots and/or parsnip and celery if you have it.
    5 minutes of frying to soften...
    Put all the cabbage in...stir gently and let the hot pan wilt it down..it will half in size..might have to do it in 2 goes...cabbage is BIG when its raw! Get it all in eventually though.

    Now you're half way there...pour about 1 to 1/2 piints boiling water in, straight out of the kettle. Easy

    stir...

    boil gently for 10 minutes. Al those veg are softening AND making a nice stock.

    All these times are roughly....just see whats happening...so long as its not burning, its gently boiling, you can't ruin it...ok ?

    Now. Pour the tin of tomatos in, and the cubed spuds and the courgettes, stir them in, and then grab that handfull of spagetti and break it into the soup....just snap it off at whatever short lengths you can do.

    Now gently boil until the spuds are soft, stir occassionally to make sure its all under liquid...add more boiling water if needed, until the spag is cooked...add more water to get strength of stock right. Taste it...spoon...taste...hmm tomatoey vegetable goodness.

    Ready to eat.

    Or better still...let it cool, and eat next day...it matures really.

    now thart is a LOT OF SOUP up there..no additives...just vegetable and water and toms for stock.

    The spagetti and spuds fill you, the courgettes help, the root beg carrot sand parsnips do the same, the tomato makes the stock..and the cabbage is ESSENTIAL so dont leave it out.

    CHEAP BIG GOOD SOUP

    Usually put a bit of sliced up chorizo in - nice and spicy.
