    Halloumi

    Wow, I am sure I have had this a while ago, but a Cypriot Colleague recommended I try it again.

    Supermarket stuff - Sliced into 8-10mm slices and cooked on a griddle. This needs to be a slotted griddle for two reasons. 1) The slots cook of the liquid that escapes quickly keeping the cheese dry. Do it on a flat griddle and you'll hav a sticky mess. 2) It puts nice brown stripes on the cheese.

    Then you can use it in curries, on its own instead of meat or best of all chopped up on a green salad with olive oil or a good dressing. It has a lovely salty flavour and chewy texture much nicer than the Indian Paneer.

    Cut into slices....fry it.

    Serve slightly brown on both sides.....

    I really like this stuff - when I was in cyprus we had halloumi, bacon and a fried egg - bootiful!

    Griddling is so much easier and less messy. There is a lot of water in the cheese so when frying it will spit like crazy and mess up my shiney cooker up and hurts my hands......mmmmm....perhaps I am a pounce

    I always put it on skewers with some peppers, mushrooms, red onion, cherry tomatoes and courgette and roast it.

    Lovely roasted vegetable kebabs. Serve with cous cous and it's delicious!

    I get a tin of chick peas, belnd them up with some garlic, cumin and a good dose of olive oil then fry up my halloumi with a little olive oil before smothering with my homemade houmous... superb!
