don't ask...I just did it last night. It worked...so who's to say why?
One onion chopped fine
1 chicken breast per person...lots of salt and pepper all over them
1 green pepper, chopped fine, per 2 people
Cumin powder
Ginger (either powered or grated fresh root)
1 tim of chopped toms (nice ones)
Glass white wine...(and more for drinking while cooking)
Oil in pan...heat gently. Onions in....fry until soft.....no fierce heat....just soften them. Put chicken in, onto the onions, and move around for 30 seconds and then leave.....low heat for 7 or 8 minutes, then turn. it will have gained a slight brown colour underneath, but will be going white on top from the heat.
Once turned, pour half glass of white wine in. Stir. Move about a little. Allow to evaporate (3 or 4 minutes). Then other half of the wine. Put green peppers in now.
5 minutes later, put half the tim on toms in for 2 breasts, all of it for 4.dont make it TOO tomatoey...and sprinkle the cooking meat with teaspoon of cumin and same of ginger. Stir gently.
Now put lid on....let it broil for 5 mniutes.
Sorted.
The suace has lost the alcohol, but kept the taste and is a lovely orange colour, and it's creamy cos of the oil/wine mix. The onions and peppers are there, but subtly. The cumin and the ginger are superb but the chciken is still tasting of chicken, and there is only a little heat from the pepper.
Serve either on rice or in a bowl, with the sauce all over it....and with hot crusty bread for dipping.
