    Carrot & Artichoke soup

    1 onion chopped
    1lb carrots same
    1.5lb of jerusalam artichokes same
    2.5 pints vegtalbe stock
    3 or 4 oz butter
    teaspoon of mixed herbs
    pinch salt
    plenty of ground black pepper


    Chuck in onion and butter, soften for 5 mins ish
    throw in carrott and chokes and sweat for 10 mins ish
    throw in veg stock bring to fast simmer, then turn down to gentle simmer
    bung in salt, herbs, pepper
    simmer till all veg soft (bout 20 mins)

    Run through a blender and enjoy, comes out really creamy

    Try with a few green Asparagus tips too if ya posh

    This thread's just reminded me of Nanny Ogg's Carrot and Oyster Pie:
    Carrots so you can see in the dark, and Oysters so you've got something to look at
    They told me I was gullible ... and I believed them.

    LOL wheres them dam oysters gone now.

    And Zak home grown chokes as well Going to double the amount of ground they get this year

    I have a plan to sow Asparagus in spring, but it will be a few years before I can crop from it Still something to look forward to
