    Kitchen Knives and Pan suggestions

    Just moved into a new place and really need some good knives to cut with before I take a finger off or, god forbid, actually cut things into reasonable shapes and sizes.

    Likewise, we've got no decent pans to do rice or pasta in so any suggestions on this front welcome.

    Not really looking to spend a fortune, just something dependable.

    stainless steel pans - the john lewis own brand ones are excellent and dishwasher safe

    Cheaper, tesco/sainsbury own brand non-stick pans are good. Not the really cheap ones, the more expensive (but still cheap overall) sets are fine. Had my frying pan from Sainsburys for 10 years now and it's still going strong. The tesco pan set is 7 years old and doing fine too. Just be careful what untensils and washing up items you use in them and they will last you well.

    Tefal are excellent non-stick but only worth the wok and frying pans IMO. more handy to have stainless sauce pans you can dishwash.

    cooking knives, the best i ever found were Gary Rhodes Sheffield Stainless Steel ones but they are no longer available - much to my annoyance as I only ever bought one of them. 16 years later and it's still going strong (and holds its edge like nothing I know)

    Make sure the blade is heavier than the handle - so it falls out of your hand if you lose grip.

    Check the metallurgy - not all stainless is equal. Don't go for gimmicks, you just want a sensible set with long guarantees and declarations of metallurgy. Simple 18/8 is no good for knives. You want hardened cutting edges. The JL classic range are a good starting point - carbon hardened s/s blades (the carbon contributes to precipitate hardening of the cutting edges through rapid quenching - and makes a huge difference to longevity) They're not perfect, but not ££££ either so good as a reasonable place to start from while you set yourselves up. Unlike super budget options, you won't need to throw them out in a few years in frustration.

    Anolon cookware is amazingly long lived, Im still using my 30cm saute pan which is 13 yrs old.

    Global knives are my personal favourite but they are certainly NOT cheap.

    My favourite knife is my Evercut Furtif santoku knife - furtif is French for stealth - stealth fighter lines are resembled in the design.

    All I know is that it is scary sharp and really well balanced - I could not treat something more carefully to be safe.

    I did really like the "sharpest knife in the world" that you see demo'd in supermarkets - so few crumbs when cutting bread. But the stupid prongs at the end make it tricky to cut onions. The handle on mine has perished, so the knife will definitely stay sharp forever as it is now practically unusable for anything other then bread.

    I've got at few ceramic knifes - very sharp, but quite brittle - don't need to be worrying about chipping a knife, so don't use them much. Also ceramic makes for a superior peeler IMO.

    I bought a decent serrated tomato knife from TKMaxx - well worth it and it cuts soft sticky brie well too.

    My ceramic Scanpan CTX 28cm saute pan is the best pan that I've ever owned. Still non stick after over 21 months, with no degradation of non-stick - unlike poisonous peeling PTFE and shockingly shoddy "value for money" ceramic pans. Price was ridiculous, even having got it cheaper from Amazon warehouse - I reckon that is has paid for itself when I consider the rate at which I was binning non stick pans.

    find pans that fit inside each other even if they don't match so they store easier.

    Buy your first set quite cheap... you'll get a couple of years out of them.. and learn what you like and don't like

    But remember... with the exception of Stainless steel, which is genuinely dishwasher safe.. everything else that SAYS it's dishwasher safe, .. well.... it will lose it's non stick coating at differing speeds from the sheer aggression of dishwasher chemicals.

    I hand wash teflon coated stuff,,,, and dishwash stainless.

    My advice for ONE large pan is stainless so you can use a good potato masher in it and not destroy the non stick..cos it wont have any!

    I went for a mix of items.

    A set of 3 Le Creuset Toughened Non-Stick pans, augmented with a cheap wok, frying pan and a small milk pan.

    A Global G-48 Fluted Santoku Knife and a Global GS-89 Cook's Knife, both incredibly sharp, plus a couple of cheap knives for general use.

    All well worth it, but not to everyones idea of indulgence shall we say.
