    Low carb ideas

    I've been following a LCHF diet for a few months now and am really starting to get desperate for new recipes......a lot of the ones I have found online have been quite dubious on taste and was wondering if any of you had some tried-and-tested low carb recipes tucked away!

    We do the 5:2 fast, and the best way of eating on fast days is low carb as they're the emptiest calories. What kind of stuff have you already been eating? I've got loads of fast day recipes that are basically some form of protein plus lots of veg...

    The Mrs does that one and I get dragged into doing it so that she won't give up.

    It's been a lot of meat and salad to be honest.....naked burgers, steaks, chicken. Looking to get away from the "salad" part (at least once or twice a week )

    OK, that's workable

    Wilted greens are really nice - I generally do spring greens, finely shredded - you fry them lightly in a small suacepan in a little sesame oil, then splash on a bit of soy sauce, jam the lid on and turn the heat down to minimum. Five minutes later you have tasty wilted greens full of lovely salty soy and rich sesame They'll go with just about anything.

    We eat courghetti a lot - you can buy a julienne peeler fairly cheaply (< £5), and you literally just peel strips off a courgette until you reach the seeds in the middle, slowly working round the edge. You'll end up wasting what looks like a lot of courgette because you'll be throwing the seeds away, but once you've done a couple of courgettes you end up with something vbery much like spagghetti or noodles that you can then stir a tasty sauce through. One of our faves at the minute is to make a putanesca with them - so fry off lots of garlic, some onion, olives, sun-dried tomatos, capers and anchovies together, then turn off the heat and stir the courghetti through it.

    Shashuka is a delicious option - you basically make a rich spicy tomato sauce then poach eggs in it.

    I've never ever been on a diet and am slim. I just make sure I get a balance diet of protein, carbohydrates and vegetables/fruits plus some exercise. Oh yeah, I don't even try those air oven roast chips either. Waste of money, if you ask me.

    My preferred diet at the moment is to get lots of carbs early i.e. big breakfast and lunch, then no carbs at all after 8, and a small/low-carb dinner, unless I'm going for a long run or bike ride the next day in which case I will carb-load.

    I don't know if I have a naturally fast metabolism or not. What I do know is that I measure how much carbs I'm going to eat to the nearest gram. Whether it's hand made pasta (made with my own hands), potatoes or chips. I don't measure the rest of the food stuff at all. However, I'm very careful in working out how much food I need though this tends to annoy the people behind the food counter who couldn't care less about my health or wealth. Their problem not mine.

    Recently, I've been investigating healthy recipes without having to compromise on taste. The other day, I had a nice salad consisting of pan fried Halloumi cheese, bulgur wheat, slices of mango, fresh mint and lemon/virgin olive oil dressing. Very tasty and healthy too. Tomorrow I'll be having Vietnamese noodle salad, as I still have Thai Basil left in my fridge, with about 50g of rice noodles plus a fiery salad dressing using Thai chilies. I don't usually make salads.

    I have this power shake every day, never gets old:

    mix nuts (a mix of brazil nuts, almonds, walnuts, seeds, you choose!)
    banana
    dark chocolate
    milk
    protein powder (if you need it)

    lovely!

    A good selection of homemade recipes for Slaws is essential... Coleslaw is just the beggining

    BBQ is a great way to add depth of flavour to vegetables and meats

    remember to add fruit to salads.. apples and oranges, pear (with blue cheese) and grapes are all awesome and make a salad into a meal

    Not sure of the Carb value..so check first.. but dry fried sunflower and pumpkin seeds go in all my salads.

    And,, this is my personal oddity.. I LOVE shredded white cabbage, grated cheddar and brown sauce.... no idea why.. but its a MEAL

    This may sound funny, but it sounds like it might be worth looking at Slimming World. My wife's been on it and just by association, I've lost about 2 stone. You can pretty much eat as much meat as you want, you just have to cut down on dairy and bread, which it sounds like you're doing anyway. There's loads of Slimming World cookbooks about, might be worth taking a look.

    One example: last night's main meal was Pork medallions in mustard & tarragon sauce, with turnip mash, baby corn and mange tout.

    I second the making fake pasta out of vegetables, it's quite neat really and very healthy! (Not so much when you chuck on lots of pesto - which I often do)

    Agreed, get yourself a spaghetti squash or two. I swear, it's a real thing. Cut in half, pop in the microwave, an then run a fork over it. Pieces will come off stringy like spaghetti. Serve with a delicious tomato sauce and parmesan and everyone is happy.

    Other options (good for when you have a slow-cooker) vegetarian chili - which is a good protein boost, soups, ratatouille....walnut and cream cheese stuffed chicken breast over an orange ginger and baby greens salad.

    Ok, now I'm hungry.
