Thread: Smoked Mackerel and Red Pepper Bruschetta

    Talking making ya hungry again!

    Another in an infrequent series!

    Smoked Mackerel and Red Pepper Bruschetta

    Serves 2 Prep Time : 5 mins Cooking Time : 5 Mins

    Ingredients
    2 smoked mackerel fillets
    4 tsp. chopped chives
    4 tsp. fromage frais
    juice of half lemon
    1 jar roasted peppers in olive oil
    1 mini foccacia
    fresh salad leaves or new potatoes


    Method
    Remove the skin from the mackerel and then roughly mash the flesh with a fork.
    Add the chopped chives, fromage frais and lemon juice and season well with salt and pepper
    Drain the peppers and roughly chop half of them, cutting the remainder into strips.
    Mix the chopped peppers into the mackerel mix.
    Split the mini foccacia in half horizontally and drizzle with the oil from the peppers, then lightly toast on both sides to crisp up.
    Divide the mackerel between the bruschetta, and then top with the sliced peppers.
    Place under a high grill and cook until heated through.
    Serve with crisp salad leaves for lunch or add new potatoes for a light summer supper.

    Cool, sounds like an original starter. Bruschetta is all good, although I’ve only had it with tomato and onions on, which I assume is the “normal” way (if there is such a thing as normal). It’s probably the oh so bad for you, and therefore tasty, oil that makes it.

    Toast, but in a trendy kinda way...

    And Hex, they DO NOT sell them in blimmin Waitrose! Blasphemer!

    But the saintly Sainsbury's stock them...

    (guess whos just got his first set of share options through)

    Being the super-lazy type, I tend to just hack off some Oriental instant noodles... Can't beat them! Just make sure that you don't use too much of that monosodiumglutimate.

    How about a dessert of some sort based around Marscapone Cheese? Something other than cheesecake/chocolate cheesecake/cheesecake with icecream/strawberry cheesecake etc

    Or maybe just go full whack with a three course meal comprising of a Vegetable based soup, Minced lamb and some sort of pasta based main course and the marscapone based dessert? :>

    Mate..if its good quality Olive Oil, (and so long as you havent cooked it to smoking, cos that createsa possible carcingen situ ).....then there is NOWT wrong or bad for ya. In fact I am an avid advocate of olive oil intake.....it does you good, not bad
