    Ramen noodles anyone?

    I've been on a random noodle diet lately just because I enjoyed a Pot Noodle a friend gave me recently as I'd not had one for decades, then I started trying all the different brands and there's some interesting options out there now.

    It furthered my thinking as to whether I could make my own incarnation something in the vein of this video:


    Does anyone have any interesting broth recipes like this I could give a try?

    I've noticed a recent addition to my Sainsbury's with a lot of East Asian sauces, spices & noodle types in a separate section to the usual pasta & sauces isles. So I may have some luck in getting what I need flavour wise.

    If you want to get proper nerdy about noodles - have a look at Alex the French guys series on it. https://www.youtube.com/watch?v=JyZj...nTFZnbqJcAfs4N he goes as far as making his own noodles!

    I tend to buy the Korean ones - they have a great punch flavour ( be careful, some are very hot indeed! ) Try and find a local oriental supermarket - the noodle isle there will become your happy place.

    I've done some DIY Ramyun broths before , my current favourite is a teaspoon of korean chilli paste and soybean paste ( you can use miso paste if you cant get the soybean paste ) in some good chicken stock , then add the noodles and leftover veg/ chicken. If you are feeling extra posh , boil an egg for 6 minutes , de-shell and cut in half before floating it ontop like a boss!

    What the heck is wrong with you, child? Had you been drinking heavily? Are you not aware that Pot Noodles are..... ohhhhhh, wait, I see what it is - You're from Bracknell!!!

    Okay, for those still living in the deepest, darkest reaches of Berkshire - Pot Noodle changed its recipe a few years back, taking out all the tofu-type pieces and all the stuff that made it palatable. I'm guessing you still have the old version there in Woolworths?
    The new ones are hideous.
    Good news is that these things last for ages, so feel free to continue using the exisiting stock... but in the name of all that is good in this world, don't buy any of the new stock!!

    Meanwhile, pop along to Reading - The decently-priced See Woo Foods cash & carry up near Morrisons (Rose Kiln Lane, off the A33) sells all manner of lovely, authentic Oriental ingredients and stuff for those of a noodley inclination... and more different types of noodles than you can shake a chopstick at!!

    I love proper 'instant' noodles (or almost any pack) from Chinatown London or my local oriental shops. I don't even mind the spicy ones. I add a little sesame oil and soy sauce and often just mix in an egg if I have one.

    I did try making a proper ramen but messed it up and it wasn't worth it for all the hassle and cost (it wasn't that expensive tbh though). I should try it again some time, but a local proper ramen place also put me off as they put an offer on one of their recommended ramen and I went and tried a properly made one and wasn't very impressed :/

    My favourite type is called aka ramen which is spicy miso tonkotsu. It is not very common in Japan and I have only seen it in Osaka. One of the well known restaurants in Osaka (ippudo I think) opened up a restaurant in London a few years ago and it was quite nice.

    I have been to ichiran and it was very mediocre.

    You can get a nice kimchi ramen in Tesco. Just Chuck in bean sprouts, spring onion, sesame seeds and an egg and it comes out pretty good for not much effort.

    You can also make your own ramen noodles by cooking spaghetti in baking powder or soda i can't remember which.

    I sometimes make char siu in a slow cooker which comes out alright. I can't get it no where near as nice as the ones I have had in Japan though unfortunately.

    - when I used to have them in the late 90's early 00's I eventually started to hate them either because I had them too often or they were meddling with the flavour/texture but subsequently didnt have them again 'til now. For that reason I dont recall their original taste.
    If I'm honest the texture is the best thing. But Sticky BBQ, Curry, Beef & Tomato are really good flavours - honestly give one a go. I didnt expect to like it myself. Have you definitely tried it since Golden Wonder sold them to whoever now.
    Naked noodle which is supposed to be nothing artificial tastes completely artificial with an awful after taste.
    I really like Nissin's Soba Noodles, actually I'd go as far as putting that with some chunky veg and small cuts of chicken as a really cheap & easy way to make a broth.
    I wonder if the ones I like have a chemical in them that I warm to.... or Cracknell has something in the water or air.

    Ah cool that's interesting, will take a look when I'm out for the BBQ run this weekend.

    Thanks that looks just the ticket to get me started. The egg definitely looks like the cherry on this

    Yep, tried some earlier this year. Horrid, insipid, tepid puddle of afterbirth in a cup. Nothing like the welcoming, warming snacks we used to enjoy out camping and the like.

    It isn't too daunting, it is only round the corner for me, I live in Reading. Definitely get some frozen dim sum and a bamboo steamer, so good with noodles.
