Youtube 'Expert' Series on Differing Food Qualities
DISCLAIMER: I'm certainly not an expert on food and drink, so it's possible this series and the 'experts' involved don't know what they're talking about - and of course food and drink almost always includes matters of opinion.
That said, I've found this series of short "Expert Guesses Cheap vs. Expensive ......" videos pretty interesting and informative as an introduction. Thought I'd mention them here.

Its not only the beans but how they are roasted which affects the taste. Its also how granular the coffee powder is,and how you infuse the coffee,and also the water you use.
Tea also can taste very different depending on the elevation it is grown,the size of the leaves and the climate. There is also a degree of blending involved. However,all that means diddly squat if the water quality isn't great,ie,very hard. Some blends using stronger flavour cheaper grades,might actually work better with harder water for example.
