    Delectable and Super-Fattening Melts

    Does anyone else share my love of chourico, Portuguese spicy sausage which they slice with the cool deli machines?

    Chourico is the main tasty ingredient of these, but you could use your favourite deli-ish sliced meat.


    Usually when I decide to make these I don't have any ingredients in the house so I waddle down the the local food and wine and buy some cheap and nasty rubber mozzarella, then grab some Portuguese rolls and chourico (I'm lucky enough to live in a "little Portugal")

    Anyway, just slice your rolls lengthways, butter 'em up and slice some rubber cheese on top. Cover as much of the bread as poss, as you need to have your rolls right up close to the grill and uncovered bread burns quick. (My last lot set on fire :-o) Melt that for about four mins, then stick a couple slices of chourico on top, whack it under the grill again for literally 10 seconds and voila, the perfect continental toastie!

    And don't feel patronised by my telling you how to do a slightly improved cheese on toast. Its not my fault I need deli rehab.

    Olives, shredded parma ham, parmesan, olive and sun dried tomatoes... all on a lightl toasted split ciabbata... bake in the oven for 10 minutes... cut into wedges then keep your hand clear of the plate as every bugger an their wife dives in a polishes the lot off quicker than a locust in a rice field...
