    Spaghetti carbonara

    Right then folks, Im looking for a good carbonara sauce recipe. The nicest ones i've had have been creamy and white wine based, but i cant find any recipes with these as ingredients! So if any of you have any good, tried and tested carbonara recipes i'd be really grateful!

    I'm not cooking on a budget really, so eggs bacon n grated chedder isnt what im looking for.

    I think schwartz do a very good packet mix for it, just add sketti, bacon and mushrooms (ick) it's in the same place as all the other packet mixes usually.

    really really yummy, and can be creamed up with a dollop of cream.

    It's the eggs that make it so rich - there is cream in it but not loads IIRC. Delia seems to agree:

    use egg yolks plus a little double cream, its lovely

    beat together 2 egg yolks plus a little splash of double cream. cook & drain your pasta, pop it back into the saucepan & stir in the yolks / cream mixture, this should coat the pasta & cook slightly from the heat of the pasta. although not to the extent that you end up with scrambled eggs! - the yolks should still be runny

    add a load of grated parmesan & some black pepper, and obvioulsy you pre-fried bacon bits, and you're laughing

    (i was in rome last week & this is exactly what they do!! )

    Its not about being lazy, its about being handy. Do you bake your own bread everytime you fancy a slice of toast?

    Exactly.

    Also, for those who don't know how to cook a certain recipe, buying a decent pre-cooked one and going from there might be about the best option.

    cheers for your replies guys, Petrefax, that's what i tried the other night, had a slight fauxpas as the egg cooked and so ended up with runny scrambled egg but other than that it was tasty! Will make it again soon!

    Nice alternative to bacon is pancetta if money is no object. You could always throw in a couple of dollops of white wine when cooking the pancetta and let it bubble away before adding everything else. Most recipes I've seen either have wine or cream but never both.

    The crack goes that it was invented in Rome at the end of the 2nd war - the Americans had loads of ham and eggs (and the Italians had loads of Pasta but nowt els) and gave them to the locals to make them some scran.

    Although it seems simple, this is actually a very difficult dish to get right - it's all in the timing. As others have said lobbing egg yolks in is the key, but you have to time it just right, allowing the heat from the spaghetti to gently cook the egg otherwise you get scrambled eggs!
