    Baked Chinese/Thai-style Chicken

    Hey guys, got a nice simple meal for you to make, best served with rice.

    Take 2 chicken breasts, preferably with the skin on, but it's not necessary. Trim all excess fat off them (the nasty, gristly fat from the underside) and place onto a square of foil about 20cm square (~8in sq.).

    Next take a good sized chunk of ginger, slice into very thin slices and slide under the edges of the chicken breast.
    Take 2 decent cloves of garlic, peel and then slice very thinly again, place them around the outside of the chicken (or under the skin if it's detatchable).

    Add 1 teaspoon of honey on top of the breast(s), and then add a table spoon of soy sauce, and a tablespoon of rice wine. Wrap the parcel up so the top of the foil flowers like a paper bag with a ball in it. (Imagination required).

    Bake in the oven at 150°C until for around 25 minutes, checking every 10-15 minutes and adding a smidgen of water.

    Season to taste, and serve, with its own juices on a bed of freshly boiled rice and topped with a sprig of parsely.
