as a matter of fact tho, i just had a small bit of "fiery mex" cheese that i found in the fridge
im not really a fan of those fancy things, neither am i a fan of anything intentionally mouldy. i really dont see the attraction
Chaource(pronounced, at least by me as "shaoorce") - its a very melty wee french number, quite salty taste, and if its been out for as long as it should have been, its 50/50 whether to dish it up with a knife or spoon

Ah yes, my beloved cheese
I love all cheese, but i always seem to to come back to the good old Stilton. I make a mean Stilton and brocilli soup too, mmmmmm....
BTW Steve, that mexicana is nice, i have some in my fridge right now. It's especially nice on toastThe only thing i will say, as a bit of a cheese snob (although not really an expert, but i know what i like) is mexicana is a bit processed/fake, but still lovely.

I like any cheese so it has to be a cheese for the mood... right now some pan fried haloumi (salty creamy greek/cypriot cheese that has to be cooked - great barbecued) with crispy bacon and a Mortons (for all the Glaswegians) roll with tomato ketchup mmmmm
If I had to be pushed for a fav then parmesan as you can do loads with it from nice crispy biscuits to a risotto or a nice crispy pancetta salad with parmesan croutons....

Yes I'll eat it if needed on McDonalds etc but if I'm making my own burgers I love to whack a nice slab of mature cheddar on and grilling it slightly so it melts onto the burger
Processed Cheese is not cheese in my eyes - its a chemcially formed cheese flavoured mass with E colours to make the kiddies hyperactive.
I agree with Lee, it ain't cheese, good cheese is something most people don't seem to bother experiencing, which is crazy, considering theres a moderately good cheese counter in most supermarkets, and most people aren't that far away from proper cheese shops.
