Way I do it is to use my recipe for Bombay Aloo (http://www.onlinecookerybook.co.uk/i...p?articleid=23) and half the potato content & substitute it with par-boiled cauliflower. Not strictly the correct way, but works for me![]()
Oooh thank youi'll be trying that, iv'e got two Indian cookbooks and neither of them has the recipe for Aloo Gobi

If this is Cauliflower & Potato, the best recipe for it by far is the one in Madhur Jaffery's Eastern Vegetarian Cookery.
Cauliflower and potato with Fennel and Fenugreek seed. I must have it at least one a fortnight.
