    risotto help

    making a mushroom risotto tonight, any suggestions? I got the rice, mushrooms, onions, tomatos etc and some stock cubes, anyone got a special recipe?

    Yeah, fry the onion & garlic in butter or a good extra virgin olive oil tiill they're soft n lightly browned before adding the rice & stock

    as 0id says - definitely get some fresh parmesan on top once u finish, tis lovely

    bit more expensive but get a block of it & put some shaved parmesan on (u can use a potato peeler to do this) - much better than the grated stuff in a tub

    be patient whilst stirring in your stock too, don't just whack the lot in & stir it around or you'll end up with uncooked rice soup

    Arborio or Carnaroli rice is best, some supermarkets do risotto rice.
    Tis tru petrefax, slow n stready is best....making me dashed hungry!

    add a bit of nice white wine - not a pale nasty type. something golden with a flavour like vanilla, deep rich body...
    I'm crap at their names - could be a chardonnay but I might be mistaken. Rosemount?...

    get either mid france or southern australian one.

    wine goes very well in rissotto, just a teeny bit - don't add too much though!.

    no wine - try gin. juniper berries mmmmm......
