my mum boils the beetroot and then pickles it in vinegar i think, very nice, makes good sandwhiches
Baked beetroot is really tasty too - makes a good accompaniment to a roast dinner.
Yep, boil them up and then marinade them in red wine vinegar and a little oil. I prefer them cooked fresh and then dressed rather than fully pickled. Eat them with feta (or goats cheese if you are feeling flush) - fantastic.

If you're after a sweeter outcome, balsamic vinegar instead of malt or wine vinegar. It's not as harsh. I even use it on strawberries, balances the naturally sweet fruit with a nice tang. Honey and balsamic vinegar is a nice combo on salads or roast veg.
