    A tasty meal for the single man

    My g/friend is away this week and although I'm not a bad cook I can never be bothered to cook anything decent when I'm home alone.

    I've got plenty of nice fresh ingredients in the house. Anyone got any tips for something that is quick to prepare and tasty?

    P.S I can't eat dairy products.

    Spicy Noodles with flash fried veg. Toasted Panini rolls, I use an elderly George Foreman minigrill. For quick, I like tuna or beef steak, just seared either side. Burritos or tacos too.

    Fajita's too - easy, quick and require little washing up

    Just cook some chicken, onions and peppers in a wok

    Add cheese, lettuce, tomatoes and a random dip

    All else is supplied by the Fajita kit by old el paso

    I tend to add refried beans

    Funnily enough my Fiancee is going away this week too

    What food line does cheese come under?

    All you need is a Pot Noodle Bombay Bad Boy, and empty some Encona Hot Pepper Sauce into there to make it hot. Alternatively you could order curry one night, go chip shop another, chinese another and see what else takes your fancy.

    if your lactose intolerant you could always try soya cheese, not recommended though apparently

    yeah but thats the worrying point some people might not be able to live (literally) with it, i love cheese myself, but it has to be strong.

    Haven't got a Wok.

    Here are my ingredients:

    Potatoes (maris piper)
    Parsnip
    Green Beans
    Mushrooms
    Carrots
    Onions
    Peppers
    Courgettes
    Chicken breasts
    Plenty of spices and stuff

    you could just use a frying pan?... you could try marinating the chicken in spices but dunno what you would do to go with the chicken. chips?

    Boil the potatoes. I love mash personally but my other half likes to cook em off then stick a bit of olive oil on them then sautee them in the oven. Add some salt and pepper to taste. If your doing her option then don't quite cook em till their soft.

    Stick the Courgettes, Onions, Parsnips, Peppers and chicken in an oven dish and put some olive oil and lemon juice over them. Salt and pepper to taste. You may want to add the courgettes half-way through cooking. Cover with foil. I reckon that should take about 25mins on 200*C, but check the chicken with a knife to make sure.

    That's what I'd do anyhoo

    That sounds good, do I cover the chicken in tin foil? or the whole oven tray? Or do you mean just base the tray with foil?

    Yumm, sounds tasty.

    Well just be creative, a tip from me would be to put either some cooking oil if you dont like things too spicy or encona hot pepper sauce (not too much, just enough to bond the spices together) in a bowl, then add spices (too taste), mix it up and then using a basting brush, or similar spread the spicy goodness over the chicken, possibly leave over night in the fridge for the chicken to absorb some of the spices, then stick the chicken in the oven till it is cooked. I have no idea whether this will work as i am not a cook by any means, but its making my mouth water thinking about it...

    Something I cooked the other night.

    Coke Chicken.

    get a nice thick bottomem saucepan and sear a couple of chicken breasts in it.


    cover with equal parts full fat coke & tomato ketchup and simmer for a couple of hours.

    it tastes a whole lot nicer than it sounds !

    Cover the whole tray. That way it seals in the flavour and cooks the veggies without burning them. You can always use the leftover juice and add some bisto for a bit of gravy

    With thouse ingredients, you could make a variation on a Corned Beef Hash, using the chicken.

    Cube the spuds and cut the chicken into small pieces, slice peppers/mushrooms/onions. Fry the spuds for a few minutes on a moderate heat till they start to colour. Add the veg and fry for a minute or two, then dump in the chicken and fry till browned. Works best with a bit of BBQ or meaty sauce stirred in. You could always splash out on a tin of corned beef and do it properly.
