RAM recommendation for Ryzen 5 2600

For this processor would 8GB be insufficient? And would getting sticks under 3000Mhz be insufficient?

Ryzen processors tend to perform better with higher speed ram and tighter clock timings. 8gb could be enough as it really depends on what you will be using the system for. As always, the more the better. Make sure you run it in dual channel for optimal performance. I would suggest you buy the highest speed ram you can afford that is compatible with your motherboard (check the QVL list from your motherboard manufacturer).

3000mhz is sufficient enough. If your goal is gaming then I would recommend 16gb as now more and more games with open world tend to utilize more than just 8gb.

The performance is directly linked the the infinity fabric AMD use, 3000-3200mhz seems to be the 'sweet spot' in terms of price/performance. As previously mentioned though, it's effeminately worth checking the QVL list before buying to avoid any compatibility issues.
