Thanks for the link brewster, I had actually just found that club! According to it the official gigabyte line on the voltage drop is as follows:

"GIGABYTE 990 series motherboards strictly follow the AMD AM3+ load line calibration design guide, and so CPU V-core voltage will drop according to loading. Such calibrations are built into the platform to protect the user’s purchase and prevent damage to the PC system"

Is that a good response or bad response!?

One thing I do have to say about the gigabyte UD boards which I know shouldn't be important is the colour scheme OMG they look good, I really like the yellow on the UD7 but I just couldn't justify the price tag on that one.

EDIT: sorry I am being a retard are the basically just almost making it impossible to turn off CnQ (cool and quiet)?

Re: New 990 series mother board buying advice.

According to forums - this reply from Gigabyte is not acceptable. Other boards from other makes don't have this issue. Also seems like the UD3 doesn't suffer the same problem to the same degree , and is based on the same hardware. Seems like a BIOS issue from Gigabyte.

Overclocking seems to be quite a tough issue on these series of boards too.
