Film soundtracks. What do you like?
I just have John Williams awesome SW Ep 6: ROTJ soundtrack on, one of my favourite pieces being the later scene involving Luke and Vader's fight in the Emperor's room, and it still stirs me. But then John Williams was always such a master, both in incidental / story driving stuff, and coming up with unforgettable themes (superman anyone?).

Amelie - masterful french folk style
Pans Labyrinth - one of the most haunting melodies around
2001 - great use of two strausses
Shrek - fantastic pop collection
oops, how could I forget: Moulin Rouge! Wonderful tapestry of musics.

I love pretty much everything Hans Zimmer has worked on. And the work Bear McCreary did on Battlestar Galactica was awesome.

I liked the soundtrack for Lost boys back in the day had some awesome songs on it excellent film too.

I have to agree with Kal on the Amelie soundtrack. Also, are game soundtracks allowed here as the Halo 3: ODST soundtrack is probably the best I've heard from a game outside of Final Fantasy.

Conan the Barbarian (Basil Poledouris) and Gladiator (Hans Zimmer) are two of my favourites.
Edit also the Thomas Newman American Beauty & The Shawshank Redemption soundtracks - unusual but lovely.:)

Seriously, I can't even tell the different tracks apart. The Rock sounds like Pirates of the Caribbean which sounds like Gladiator and everything else he's done.

O Brother Where Art Thou? - I gained a whole lot of appreciation for bluegrass after watching this movie
Crouching Tiger Hidden Dragon - beautiful, sometimes melancholy
Pirates of the Carribean - always feel ready to swash some buckles when listening to this
Disney's Aladdin, Lion King, Little Mermaid, Beauty and the Beast, The Jungle Book - classics, all of them
And John Williams' tunes, natch :)

Anything by Clint Mansell is good, and totally agree on the Oldboy OST.
The theme tune for The New York Ripper is class too.

Huge Zimmer fan here, also Newton Howards stuff is pretty good.
To be honest I love the production involved with their work, film is one of the few avenues where serious money can be put forward to get a complete orchestra in a studio along with electronic production. It rarely happens elsewhere.
The Batman soundtracks, Inception, Da Vinci Code/Angels vs Demons - they're brilliant tests for your AV system. :)
