2nd for joe abercrombie - its character based medieval fantasy, the 'magical' content (although important) plays second fiddle to action and humour, dont expect much in the way of wizardry etc.

I'd recommend a lot of what's already been said... but I don't think anybody recommended Robert Jordan, yet? The Wheel of Time series is honestly brilliant, and has stretched to a final 14 books, so is epic enough to keep you busy for a while if you get into it.
Sadly... the author died... and the series is being finished (or has been finished, the last book is out in January) by Brandon Sanderson. But he's done a great job (and on that note, his own books are good too, The Mistborn series, and The Way of Kings).
Also... if you enjoyed the Black Magician's Trilogy, Canavan's other series, Age of The Five, is also good, though it takes a little bit of time to pick up (much like the Black Magician's Trilogy). That, or there are sequels to the Black Magician's Trilogy, now.

Aww cmon guys, mobody mentions the Malazan Book of the Fallen or The Black Company?... (admittedly slightly on the military side of fantasy)
A Song of Ice and Fire by George R R Martin (Game of thrones TV series to check out as well)
Codex Alera by Jim Butcher (awesome series, lots of laughs to be had as well)
Stonefather by Orson Scott Card (nice novella, his politics aside its a good read)
Lies of Locke Lamora by Scott Lynch (funny thieves fantasy also awesome)
Anything by Gemmell or Pratchett is gold in my view.
Good Omens by Gaiman and Pratchett is FTW!
THe Vlad Taltos series by Stephen Brust is also funny fantasy with action
Batrimaeus Trilogy by Jonathan Stroud is action funny fantasy

Agree with Darkplek, the Wheel of Time series is good, definitely one you need to dedicate some time to though, so many books and they're all pretty beefy - wondering if Brandon Sanderson might bring them to a proper close at last!

For something a little different have a look at the Abhorsen series, its for young readers but it was recommended to me by an adult nd I'm an adult and I've shared the series with other adults.

If I was going to recommend Terry Brooks to someone else, it wouldn't be for any of Shannara books (which, although I'm quite fond of them, can be quite turgid and often take themselves too seriously), but for the Magic Kingdom of Landover series, which are frankly more original and better written. Didn't realise until I hunted out that link that he'd written a new one a few years back - will have to dig up a copy and see what it's like :)

I'll second Ratomond E. Feist, Magician was simply amazing.
Also the Lies of Locke Lamora is good too.
Also try Brent Weeks Night Angel Trilogy and Brandon Sandersons Mistborn Trilogy. I read both after reading trudi canavans Black Magician books.

I agree the Dragonlance books were good, the Chronicles and the Legends were favourites of mine. The Forgotten Realms books were good too, espically the Drizzt Do'Urden books by R A Salvatore.
