I'm currently reading Brandon Sanderson's "The Way of Kings" and it is excellent. I'd highly recommend it, and with the sequel out soon it's a good time to pick it up.
I can't recommend The Mistborn Trilogy, also by Brandon Sanderson, though. Whilst it deals with adult themes the style of writing is extremely simple, as though aimed at a young adult audience. I had the same problem with The Hunger Games.
Update : Just finished Joe Abercrombie's trilogy, LOVED it. V slow to start with, wasn't keen on three major scene changes in 3 successive chapters, but after a while it gelled and the whole is simply brilliant.
Just started Wheel of Time, very different, fast paced, but well writted with nicely solid characters.
Is that the First Law trilogy?
They're doing the set for £9.51 on Kindle, worth a punt?
I enjoyed Django Wexler's The Thousand Names. It's more muskets and sorcery; quite different from my usual fantasy reads but I found it very enjoyable.
Also, Jasper Kent's Danilov series - particularly the first novel, Twelve. Set in Napoleonic Russia it's well worth a read. :) (Edit the latter is probably more horror than fantasy per se.. I won't say too much for fear of spoilers.)

I actually stuck my head in to suggest the Dresden Files, but I see that's already been and gone.
Not seen any love yet for Patrick Rothfuss - Name of the Wind, The Wise Man's Fear, and the third book that he's taking forever to write (and is repeatedly mocked about when he makes any live or recorded appearances!). I'm going out of my usual line here as I haven't read them myself, but two people whose opinions on literature I respect think very highly of them, so they've got to be worth a punt :)

They are truly awesome books, some of the best fantasy I've ever read but the man is just pissing me off now. Hes on facebook all day every day talking about other stuff he is doing... Just hurry up and give me the 3rd book or at least admit you have major writers block!
Weeeelll, thats actually a prime reason for me NOT to start the series....
I thought he'd pretty much finished writing but is now feeling the need to do massive editing? And I think he's also admitted to a certain degree of writers block. I guess one of the problems when you get very popular is everyone wants you to do promotional stuff and other things that take you away from writing.
I'm sure he'll get the third book out before too long... ;)
Remember the 2nd was meant to be out in 2009 (2 years after the 1st) but ended up being 4 years later :(
I've read them both (and have a lovely first edition of Wise Man's Fear :D ) and love them to pieces. I can definitely recommend them, though it's best to treat the books as a single continuous book rather than three separate parts. Eagerly awaiting the third book that's supposed to be out next year (we pray).
