If I set up a wireless router for her, can I just get any old PCMCIA card from Scan? and slot it in?

In theory yes. Just like in wired networking you can find combinations that just don't get on at all.
Best bet is to get them both from the same vendor. Edimax seem good and affordable.

For least hassle, and best compatibility, keep them matched... indeed if you are buying the ADSL Router there are lots of bundles with the card "free". I can recommend the NetGear DG834PN – mine has been rock solid, and I found I could buy is cheaper with a free card that on it’s own!!
If they comply with Standards, then you should be able to mix and match, but if it is all for home, easier to buy a matched pair.
Try to make each and every day the best it can be.
I'd personally stick to major brands (Belkin, Netgear, Linksys, etc) (except D-Link), but mixing and matching won't be a problem
