Go for the 2 * 3200, always worth a bit of extra future proofing even if you ain't gonna use the extra speed imo

It depends what system you are going to be running it all in, If you are going to be putting a 800fsb p4c class chip in the p4c800-E deluxe then you have to have 3200 memory to put in it.

Achaelus i get the impression that your not really looking to overclock so perhaps its better to save the moment and get a cheaper make. Perhaps like Twinmos (although this is fading nowadays), Adata (recommended), Winbond or maybe Samsung.
If you are dead set on spending money have a look at Corsair stuff too.

I'd also agree with Knoxville that you should go for the x2 512mb sticks of pc3200.

In terms of overclocking, I may not jump into that right away...however, as I learn more what I'm doing, I want to have that option. So, in terms of suggestions, I do want to overclock with this machine going in the near future. Also in terms of oc'ing, I had someone suggest the Abit AI7 mobo as opposed to either of the Asus boards I've mentioned. Any suggestions on that front?
