P5K SE vs. P5K-E/WiFi (and suitable memory)

About to order a new motherboard (and E6750) for the system I'm building, which is my first build. I'm wanting a P5K-E/WiFi, mostly because of the wi-fi, but it is out of stock at place where I intend to order (Scan). So I'm looking at the P5K SE instead, difference in price will cover a wireless pci card. So my question is, apart from crossfire support which I'm not interested in, what is the difference between these two boards?
Memory - I want 2GB. What would be recommended (and sold by Scan) for these boards? I'm not wanting to become an uber-overclocker so high-performance/expensive memory not required, but I might want to tweak for fun.

P5K-E is 8 phase power design (to 4), stackcool2 (slightly improved PCB and heat dissipation), ICH9R to ICH9 (raid to no raid), 6 internal sata ports, 2 external (to 4 and 1), dual Gigabit LAN (to one), ADI AD1988B (to Realtec 883), 3 PCI, 2 PCI-E X1 (to 2 and 3) and 2 Firewire (to 0). There is also no cooling on the mosfets on the P5K SE and the P5K-E heatpipes appear copper based (to only an aluminium northbridge sink on the SE).
Not sure about BIOS differences and I may have missed some other stuff. This article has a comparison (P5K-E and P5K SE, among other boards):

I've got the p5k-e with Corsair XMS2 6400 memory (2x1024) and they work fine together. I'm an overclocking virgin but still got it up to 3ghz no problem, I'm sure it'll go a fair bit further too. I think I paid about £66 for the two matched sticks.

Thanks guys. Apart from the cooling, the differences are not important to me since I don't intend to use RAID or have a load of external SATA devices. But that extra cooling might be useful, so I'll wait.
Smudger - what did you get up to 3ghz? Surely not the memory?

I got the CPU to 3ghz, haven't overclocked the memory yet, and might not if it's not really necessary.
