If I use two different DDR2 RAM brands, how do I detect that dual channel is being in used?
When you boot up your PC, it should tell you when you first switch it on and it does the memory test. It should say, "Memory runs dual channel" or something similar.
If not, you can always get a little program to tell you. CPU-Z is well worth having because it tells you lots of things, including whether your RAM is running dual channel or not.
