Temperature Monitoring Issues....
Ok, I am using an Asus P5Q Pro board.
I have two case fans which are connected to the motherboard, so activate when the temperatures get high...however every now and again my CPU temp goes from 35oC straight to 123oC.
I am 99.99% sure that this is a false temperature reading as I wont be doing anything in particular to make it do this....however it is annoying as it makes my PC loud with fans untill I restart the PC which puts it back into the 30's....
Does anyone know what would be causing this? Would it be the BIOS settings? Or its the Asus AI suite that comes with the board?
Do you have to completely re-format a PC to update the BIOS?
Any help will be much appreciated.

Looks like you have a faulty temperature sensor on the motherboard.
Try download CoreTemp and check if your CPU is really going to 120'C. There are other monitoring programs like Speedfan to check the temperature.

Probably faulty temp sensor. As arthurleung said, check if it is really going to 120, lol.
If it isnt then you can manually set Asus AI Speed Fan thing to make the fans spin at a constant speed, irrelivent of the temperature.
