I use 5.1 for my 360 and pc but can only have one plugged in at a time (obviously). I want some sort of switch box thing for this, the only problem is the ones I have seen are only for stereo output not 5.1, anyone have any ideas?

Is it safe to think that you're using optical outputs and you simply want to switch between the cables, Daniel?
If you're not after anything fancy, there are three-way switches available very cheaply. I've used one for a few years now without problems.
Searching for 'optical switch' or looking at sellers of audio and video cables should show what you need. If you're in the UK, the following are links to switches from two companies that I have used on a few occasions:
