The Caviar Black is indeed the fastest of the line up for now.
Obviously if you can get a drive with 500GB per platter rather than 320GB per platter (as the 640GB has) then it will be a bit faster, but I wouldn't worry that much as it won't make a very big difference.
Like everyone said, WD Black is the fastest of the 7200RPM drives right now.
However, I've heard nothing but good things about the Samsung F3 so you might wanna go for them.
