I have a pair of Samsung HD321KJ 320GB hard disks in my computer currently. The drives have 16MB cache and IIRC I think they are two platter drives. Will the 500GB F3 or 1TB F3 be much faster especially with the first generation SATA interface on my 975X based motherboard?? I am looking for a decrease in file write times for PSP X2 and also in load times for games.
Do the F3 drives have less noise and do they run cooler than the Spinpoint T drives?

Try tomshardware drive charts or something... AFAIK recent Seagate .12 or Samsung F3 drives with 500GB platters should be faster, whether it's worth cost for the result is another matter.

I would say that you won't notice a big change in "snappiness" as you do with SSDs, because rotational speed has stayed the same, at 7200rpm (exc velociraptors and eco drives at least).
However, storage density is what's increased dramatically. If we're talking about single platter drives, a 500GB Spinpoint F3 has loads of data on it per mm squared, so therefore even though it's spinning at the same speed, it reads more data per second, and therefore is more faster for writes and reads and so on.
To cut a long story short, I read an article on Tom's Hardware fairly recently which suggested that a brand new "Green Eco Drive" running at 5400rpm is fairly equivalent to a 3-4 year old standard drive running at 7200rpm, so a modern 7200rpm drive (with 500GB per platter ideally) will in all likelihood perform far better than your current ones.

I noticed the noise of the F3's although they are not that bad. Can really answer about the speed as my old drives were WD's and one was really old.

I Just moved from a WD 250GB drive as my system to 2 x 500GB F3s in RAID0 with a 200GB partition to keep me using the fast bits. Yes... its faster but not so much that it blew me away, i wouldnt bother changing unless you are going to SSD.
My drives are very quiet though, i think sput must have got a bad batch.

Can't speak for the F3, but the F1 is louder than the T66. But the T166 is one of the most quiet 7200RPM drive as long as your case can damper it's vibration (or you suspend them). The F2 Eco is silent inside the case (when not seeking) to me and good enough while I wait for SSD price to fall.

I replaced one of my Spinpoint T hard drives with a 500GB F3 as the former was having issues. The F3 does seem to be more snappier for general usage IMHO.
