If you were running the CPU at stock speeds it looks a nice build. You could always get a Phenom II X4 955 and a 785G motherboard and put the £40 into an HD5830 as this should be between £160 to £180 when it is released in the next week or two.
The motherboard has a 4+1 phase VRM so it is not ideal for overclocking the Core i5 750 massively but if you are using stock voltage(or a slight voltage bump) it should be fine I think but I would make sure that you attach a fan or some heatsinks to the VRM section. I would also investigate how far you could push a Core i5 750 using only the stock cooler too.

Well Overclocking is not essential, I just want to make sure it will run most of games available today on high with a good fps, as I don't want to be spending £700 and get a glorified toaster.
Oh and I admit I am a little bit of a graphics whore when it comes to eye candy.

I would wait a bit then until the HD5830 has been released in the next few or so.
Anyway some of the bits you have listed are out of stock anyway.

Ok no problem, I'm not a huge rush if I'm honest, Phenom II X4 955 CPU and a 785G MoBO and with the £40 spare from the CPU get a HD 5830 when they are released.
