A bod from scan should be able to tell you, seeing as they're already building NF4 SLI machines..

What I'd like to know is if I purchased 2 SLI capable PCI-Express GFX cards, do I need to buy the connecting SLI interface separately, or do they come with the cards?

Most likley to be bought seperately, or to come with the mobo

    They come with the mobo's.

That way they can match the colours of the mobo, and be the right length if they've spaced the PCIe slots out a bit.

No nVidia is only going to produce socket 939 boards for AMD. In 2005 their supposed to come out with nForce4 for Pentium. ATI is supposedly working on their own version of dual video cards.

Here's a link to the Asus SLI board.
