Nothing wrong with it. Love the case, been on my wishlist for a while now.
I would rather get the D5 pump and reservoir combo. I have it and find that it is really good. Used to have DDC pumps but they make more noise than the D5, which is why I switched.
get PWM fans and control them with the pump via the motherboard headers.

Changed the pump res combo for a D5 and the fans for a corsair SP120

How are you planning on mounting everything? I'd expect some 45deg connectors to be useful for the block at least. Also, that ram is overpriced, You could either ge 16gb or an i7 for the difference between that and non lit stuff.
The WC stuff is essentially an EK X360 kit with a worse radiator for £40 more - unless you're desparate to have white coolant (or the case won't fit a 63mm rad) I'd suggest picking that up instead (although having gone from one to the other, anything with a D5 is better for noise).
You also need to think how you're going to mount the pump. The EK one as it comes I don't think includes a lot of the useful mounts - you probably want a shoggy, or maybe one of the 120mm mounts for them.
I wouldn't touch a GTX980 for that massively overinflated price when you have far superior cards like the GTX980TI and Fury for around the same price.
Similar RAM can be had far cheaper elsewhere and for that sort of budget I would seriously consider going X99,especially since it will benefit from watercooling more too.
The 980ti with waterblock is a few £100 more I think x99 is a good shout though
They actually aren't the connectors I will be using, I put them for reference only, I'm just doing the sketch up now to work out the loop and what connectors are needed.
I may do an x99 basket now and see what that comes out like.

Any advice on cutting it back by a couple of hundred quid? Maybe cheaper RAM or a cheaper way to get a Watercooler 980 ti
If I were you I would fit your own block! With some companies,they will allow to change the cooler and it won't invalidate the warranty.

Also a £150 to £200 motherboard should be fine AFAIK.
The XFX PSUs are also made by Seasonic.
It's not really cheaper to mount your own block as far as I can see, maybe I'm missing something?
I'll take a look at the XFX PSUs, do corsair still use Seasonic?

When I bought my ax860 they were certainly using Seasonic for the non I model and Flextronic for the I (digital ) model. Familiarity made me go with the seasonic option (I also have a seasonic gold 1250) and have also had 3 other seasonics in the past. Most importantly I have never had (touches some wood) an issue with one of their psu's and have been using them for many years.
Since they cheaped out on their oem's Corsair only use Seasonic for the HX650, AX760 and AX860 now. The vast majority of their units are built by CWT with the CS series and upcoming SFX series built by Great Wall and the AXi series built by Flextronics.
Personally I would not buy one of Seasonic's own psu's right now as they are overpriced. The units they make for the likes of XFX and EVGA are very similar to their own models (sometimes identical) and they tend to be much cheaper. If I was buying a psu right now it would be a EVGA. The EVGA Supernova G2 750w at £94.99 is a gold rated, fully modular unit built by Superflower and is based on their own Leadex Gold platform but have no leds and EVGA has extended the warranty to a whopping 10 years. It has a single 12v rail of 749w and you can read a review here. Another option is the EVGA Supernova P2 750w at £109.99. This is also a Superflower built unit and based on their Leadex Platinum platform. Fully modular, platinum rated with a single 12v rail of 749w and that whopping 10 year warranty. No reviews yet as it's too new but this is probably where my money would go right now.
EVGA will be opening a UK support centre next month which is excellent news and means we no longer need to RMA to Germany.
