Oldest piece of tech I have lying around at the moment as a spare is a AMD 5870 gfx card.

Haven't we had this one recently?
A Casio scientific calculator purchased in 1995.
Original MX518 mouse from 2005 which I'm still using. I replaced it with a G602 a couple of years ago which started double clicking by itself after 18 months so I'm back with the MX518. I guess at some point Logitech figured building mice that lasted decades wasn't good for business.
amstrad cpc 6128 or maybe my minolta X300 camera. probably the latter tbh.
Well, Apple II Europlus, with a load of accessories and software, goes back to c.1979. That's for computers.
Or a programmable TI calculator, c.1974-ish.
Also, a Canon EF 35mm SLR camera. That EF refers to the camera body, not the EF lens mount. I got that in about 1975. IIRC, it was the first SLR with an electronic shutter.
But the actual oldest (that I can think of) that I bought for myself is my first SLR camera, a 35mm Praktica Super TL, which I got (I think) in 1967 or 68. It was certainly about then. I also still have some of the darkroom gear I had with it, though the bigger bits (enlarger, etc) are long gone.
Though if watches count, I have my grandfather's fob watch (half hunter, I think), which I was given by my father, and that dates back, as far as I can tell, to the latter 25 years or so of the 19th century and a watch probably qualifies as "technology" though is probably not what the question had in mind.
And yes, I'm a bit of a pack rat. Or a lot, maybe.![]()

I'm still using Microsoft Intellimouse Optical from the year 2000ish. I think that's the oldest tech related thing I've got.
I realised last night it's my mum's old kenwood blender from the 1970s. Still going strong that thing. And used several times a year, particularly for making batter.
I have some camera gear and Hifi stuff from the 1970s which seems to work??
If it comes to computing parts - the A6 3670K CPU I won in 2012 on Hexus is still being used,as is a monitor I bought in 2006(made in 2005).
It was only a few years ago that I replaced a Kenwood Chef (model A701A, IIRC) from the '70s.
It was still working but before I got it, mum managed to break the ceramic (I think) bowl and the plastic one she got as a replacement was, well, naff. That didn't last so well. The Chef itself still worked but the motor/gearbox was getting very noisy (with a grinding type backnote) and the company I was going to get to service it could no longer get parts. Apparently, Kenwood had stopped supplying parts, just 'cos they stopped making that model >40 years earlier. Flippin' cheek.
MS et.al. take note - some companies support their products for nearly half a century. Hint.
So, when Kenwood had an especially good offer for for a new Chef (Titanium, with stainless steel bowl) in terms of loadsa extra bits, I splurged. Now, I just need a pasta machine for it 'cos I'm getting to old for my manual one. (Note: for 'old' read lazy).
Oh, and maybe a mincer to do a nice sausagemeat blend.

For my PC's the oldest in-use component is an atrocious AMD FX-4300 for one of my browser-based machines at work. it does the job - mostly!
As for the oldest tech, I have a 1980's Technics record player + Wharfedale speaker set up, still going strong 8)
Probably my Marantz PM251 (1985-86). It`s still working fine.
a 1987 Canon EOS 650, great as I canon use a lens on my EOS R and my EOS 650 and all the models I own in-between.
I have a ZX81 in the loft that worked the last time I tried it, as did the ZX Spectrum. Sadly, the 16K RAMpack for the '81 was not so durable. I swear I had a Memotech 32K pack somewhere too, but I have no idea what happened to it.
