I have a few 12V "Panaflo NMB-MAT FB-120-L1A" case fans which I am looking to rewire to run at 7V as I need to reduce the noise level.
Any ideas about which wires they need to connect to for this voltage?

Why not connect the fan to a fan controller and push the voltage down from there?
You could fine tune it so you can accept the noise level while providing higher cooling performance. And you don't need to do all those soldering, etc

Take the red wire from the fan and connect it to a yellow wire (+12v) from the PSU.
Take the black (ground) wire from the fan and connect it to a red wire (+5v) from the PSU.
7 volts easy as pie.
Is already attached to a 4 pin plug? Easiest thing in that case is to just to remove the pins using a compass pin remover and swap 5v with ground, if its a 3 pin then rewire the adaptor.
Yeah if it's already got a standard 4 pin molex on it then it's very very simple:

All done.....wired them through a double pole switch so that I can change between 5 & 12 Volts...........cos I luv to solder...

Also made the little fan switch they tell you how to make, works a treat. Means i've got 12V when needed but silence when i dont need the cooling
