Could someone please give me any reccomendations for a decent board for socket 939 NON SLI please. Any reviews I look at seem to be just SLi/Xfire.

another vote for the ultra-d here, although they arent the easiest to set up if you are a beginner...or just never used a dfi before :)
Abit AN8 Ultra if Scan have any left.
failing that another AN8/KN8 variant depending upon requirements/budget.

The AN8 Ultra has been discontinued by Abit, so you might struggle to get one now.
You could go for the KN8 Ultra. You could also go for an SLI board, and only use one of the slots (e.g. the Abit KN8-SLI costs the same as the AN8 Ultra did anyway).

How about the ASUS ultra one, i was looking to get that too, is it any good?
It's a decent basic board.
Another couple of £ would get you either an AN8-V (uGuru, wider voltages) or a KN8 Ultra (SATA II & Active Armor secure networking engine - neither really make much difference) or another £10 would get you a KN8 SLI which adds Firewire & passive (silent) chipset cooling along with the SLI that you don't want ;).
Another alternative would be the Asus A8N-E as mentioned by nvening

That's the one.
Good value, gives you pretty much all the features & pretty reasonable overclocker (300HTT plus).
Remember that any (Abit, Asus, DFI etc.) AMD K8/nF4 board needs a good PSU with as many Amps on the +12V rail as you can give it.

If i was going to get an nvidia card (for my mates new system) then i would probably get that, but im getting him a 1900xt and the xfire boards are not as good so im going with an ultra board, he would never buy a second card anyway.
