ive got 3x 256mb on my nf7-s, and i get dual chan still, though i didnt expect it

Howard it's like that because of Dual Channel, it was like that on nVidia's reference design. The slots to use in order to enable DC-DDR should be covered on the manu's website if not also in the manual. I believe you always start from DIMM3 and work your way towards DIMM1 but IIRC basically DIMM3 is one channel while DIMM1&2 are the other channel so all you have to do is ensure both channels have RAM on them. It gives around a 5% boost overall, more in synthetic tests which isolate only the RAM. It is considered best to have 2 sticks of equal size and branding/rating. If going to 3 sticks it's been noted that it can inhibit max o/c's esp 400FSB and it's uncertain whether you lose some of the DC-DDR boost esp if each bank has different amounts of RAM. I haven't seen anything definitive on this but would suggest you do some testing |SilentDeath| (if you have the time).
