Your memory won't make any difference to your cpu overclock at all. With a divider you could have ddr266 and still have good overclock.
What are your settings at the moment?
I currently have my rig clocked at 2628Mhz using 9x multi and HTT of 292Mhz. My memory is running at 238.9Mhz 2.5 3 3 8 11 16 1T
The divider settings are:
100(Mhz)(1/02)
120(Mhz)(3/05)
133(Mhz)(2/03)
140(Mhz)(7/10)
150(Mhz)(3/04)
166(Mhz)(5/06)
180(Mhz)(9/10)
200(Mhz)(1/01)
So say you want 2700mhz and you want to keep ram overclocking out of the equation. The easiest thing to do would be 300x9 with the memory at 2/3 so not overclocked at 200. You lose a little theoretical memory bandwidth compared to a higher ram speed but Athlon 64s are bandwidth heavy so it makes virtually no difference in the real world. The higher cpu clock should also more than make up for it.
The main thing that will limit your overclock that you have no control over will be the board's fsb limit and the cpu's limit. Ram shouldn't limit things because you can just use a divider to keep it at stock no matter the fsb.
Thanks for the help. I will give it a go later and if it is not stable then it must be either my CPU or my Mobo.
A good read is the overclocking guide at Dfi steet:

The max cpu mhz test is a good one to do as it take a lot of the guess work out.
I have not had any luck with getting my rig stable at anything over its current overclock of 2.6Ghz.
