Isn't that just water changing state in the low-pressure areas? I.e. you'd expect a low pressure area just behind the wing and on the top surface where the flow is much faster.
Edit: Oh - now I see the shockwaves. Wasn't looking very hard... :) d'oh!

Ok then. A "shock wave" is the commonly used term to describe a moving area of extreme high pressure caused by something forcibly pushing the air/water/other medium around it away, like an explosion, or a fast moving aircraft. If the pressure build up is sufficient in air, like in the first picture, the air becomes so dense it actually lenses the light passing through it causing a visual distortion - look just behind the "U" on the "US NAVY" marking on the first picture for an example. The simplest example of a shock wave can be demonstrated by slapping your hand into some water - the ripples are the pressure front expanding from the point of impact. It's the same effect in air, but because air is much less dense than water, you have to hit it HARD to get a visual effect.
