I've seen a few videos on this and it look like a great game. I'll download the demo first but my question is do you think it's better to buy the early access game or wait til it's fully developed?

I bought the game 1.5 years ago and it's given me hours of entertainment. I nearly always wait for games to be fully completed and don't like to play beta's but if you like sandbox play it's great to get asap. They implemented docking of multiple craft and allow you to transfer fuel etc some months ago which let you make some crazy contraptions and get in practice for when they make actual missions which i believe is on the line up for the next update.

definitely would recommend.
