So we know Seasonic is a reputable OEM, what about Flextronic?
Is there a visible difference between these two OEMs? Surely for Corsair to use Flextronic for their top-end AX1200i (And I'm assuming 760i and 860i) it must mean that they're pretty damn good at what they do, but really is there a difference?
Furthermore, are the non-i variants of the AX760 and 860 Seasonic?

Yes the non-i variants are Seasonic.
Just judge everything by the reviews. Don't automatically assume that Seasonic are the best, or that lesser known names are not good.
Sometimes you can be pleasantly surprised :)

Thanks for clearing that up. It's just that with the small price difference between the two units, overall quality would probably be high in both. Assuming the extra 10% is going to the DSP and Link tech.
