I've been looking around for the same thing. Gamestation in manchester have the core ones available but not the full packages.

woolworths.co.uk are constantly adding stock that _was_ assigned to the shop floor, back to their online ordering, plus adding more stock as peoples CC checks fail.

According to the staff there, if you can place the item in your cart, then you will be getting one on the 2nd Dec (if ParcelForce dont let you down).

I spent a couple of hours on Friday spamming the PGR3 Pro Bundle and eventually got one in the cart

I guess it does if your one of the extremly small number of people that won't want to buy either of those games on release day...

go into a woolworth store they will give u better detail abt how much they have they take £25 approx for deposit.

Or walk into dixons store see how many preorders they have place urs in, im sure they will get some in store as I have donw so myself My pops works there.

As far as I'm aware, John Lewis will be getting the X360 into stock, and they don't take pre-orders out of principle, and also because the stock system can't work with pre-orders.

If I went for the non hard drive version, could i buy a hard drive and upgrade it to one myself? might save a few quid plus get a much bigger HD.

The harddrive is in a seperate Xbox360 specific enclosure. You'd have to buy the £80 harddrive first and try to replace the harddrive inside.
