Doesn't BF3 (for example) adjust draw distances and suchlike for 2Gb cards compared with 1Gb versions? Doesn't give extra frames, but improves performance.

Also, surely Skyrim should be in a 2Gb vs 1Gb benchmark? It's the single most responsive game out there for extra VRAM. Have a look at Anandtech's GTX650 1Gb vs 2Gb test;

if BF3 is being played it seems more than 1.5GB can be used @ 1080P with AA and ultra.
