I've had three monitor setups before that meant I was moving my neck around all day and actually led to a sore neck. For normal use I find one monitor to the front and a second to the side is almost as good in terms of the amount of information in front of me but easier on the neck.

For gaming just get a VR headset, way more than 180 degrees and the head tracking is awesome.
