Your network should be able to provide that info, a quick google seems to indicate it should work.

So, if your Nokia supports any of the frequencies specified, you should be alright on the handset front. Network front, payg has a lower chance of working than contract, so you might find even if your handset works, then the network wont allow you to connect.

As long as your mobile is unlocked, and they offer payg services out there (some countries don't)
dont roam, it cost a bomb and that's even if someone from the uk calls you they will pay local and you will pay the long distance difference. plus if you're with three then you will definitely have to even if someone called and it went to your voice mail. take dave's advice and get a payg
I'd second (or third?) the PAYG argument, if you get say a $50 SIM card, you get $50 worth of calls, so the SIM is free, plus you'll only pay a few pence for texts home, rather than the 35p most UK providers charge.
Which provider are you with. My girlfriends just back from canada (she's on 02) but she got free multimedia messages while she was there.
It's worth checking out if possible.

Even if it's locked it's probably easy to unlock.
Nice idea on getting a PAYG card - but I guess it does depend on usage.
If you're going to use your own phone - the phone working is one thing - ensuring that you roaming is activated is another...something your provider can do.

My bill went from £30 to £96 just because I made some phone calls whilst in Ireland!
For NZ you should just need to phone your company and get them to enable international roaming. Was easy when I last was there, but that was a monthly contract so don't know about payg. Phone cards are pretty popular out there. I can find out pay as you go prices for you if you want as my bro is out there.
