Yeah, that should work fine.
Getting an iPhone from O2 means a special tarrif because of the "unique" way Apple and O2 finance the cost of the iPhone (it's different from a nromal handset apparently). But the actual SIM and netwrok connection are the same as a standard phone.

The pay monthly iphone sim is "uniquely" configured (and billed), Visual voice mail won't work with a normal SIM, but this doesn't work on PAYG either (may be other things don't work either). There might be something in the T&C about putting a normal sim in an iphone, O2 will know you are using an iphone with a normal SIM but I'm not sure what they would do if anything - I've never heard about anyone unlocking the 2G iphone and using a normal O2 sim having a issue.

Is there anything else other Visual voice mail? From recollection all the other "reasons" for not using a iphone sim centred around how much data would cost.

To be honest, it's probably because I couldn't care less about the iPhone that I forgot about all that :P
